1. The Gaelic Grasshopper
The perfect drink to get your festivities started. It was made famous by the Seamstress bar in New York City, and it’s so good it almost tastes like the milk from your Lucky Charms cereal—just with a little kick. It’s made with very simple ingredients but tastes like a guaranteed party hit. You’re welcome. Just shake 1.5 oz of Irish Cream Liqueur, 1 oz. of Irish whiskey of your choice, with .5 oz of Creme de Cacao and .5 oz of Brancamenta over crushed ice. Garnish with mint or shaved chocolate for an extra touch.
2. Irish Old Fashioned
If you’re the refined type, and looking to sip on something festive but not go all out, this one is for you. It’s an Irish twist on a classic, so you will probably happen to have all the ingredients on-hand. This drink happened to be made famous by the Dawson Hotel in Chicago. Chicago is known to dye their river bright green and celebrate St. Paddy’s Day like the realest ones out there, so we trust this sipper. All you’ll need to do is combine .25 oz of honey syrup, 2 dashes of angostura bitters, and 2 oz of any Irish whiskey of your choosing (we like Redbreast.) Add ice and garnish with a swathe of lemon. Look at you, being all refined.
It’s like the adult version of a Shamrock Shake. This deliciously green cocktail is perfect to get into the St. Paddy’s spirit. It’s cheerful, tasty, and quite refreshing with a minty zest. Take it all the way back to your childhood, with a kick. Just add 1.5 oz of Midori Liqueur, with 1 oz of Irish Whiskey, and .5 oz of Irish Cream to a shaker with ice. Combine until it’s deliciously frothy and cold. Top with whipped cream and a garnish of mint.
4. The Macnamara Rose
The name itself sounds like a good time. This drink is a refreshing, floral combination with a bite of classic Irish whiskey. Perfect for those who want to toss a few back without the burn. Plus, they look completely Instagram-able to make anyone envious of your St. Paddy’s Day setup. For this cocktail, start by muddling a slice of cucumber lightly in the bottom of a mixing glass. Next, add 2 oz of Irish whiskey of your choice (this recipe works best with Knappogue Castle 12 Year Old Single Malt Irish Whiskey) .75 oz of Lillet Rose, and .5 oz of Aperol to mix. Add ice. Garnish with a slice of cucumber and sprinkle with a bit of Kosher salt and you have yourself a craft cocktail.
5. Finnegan’s Wake
If there is one thing Irish are known for, it’s to have a good time. The name of this drink proves it. It actually used to be customary in Ireland for wakes to be more of a party than a crying affair. Let’s take a page from their book this St. Patrick’s Day and celebrate life. It might look like a margarita but this drink is all emerald isle. Now that’s getting in the holiday spirit. For this drink you’ll need 1 oz of Jameson Irish Whiskey, with 1 oz of Green Chartreuse, 1 oz of maraschino liqueur, and 1 oz of lime juice. Add all the ingredients to a shaker with ice and shake until well mixed and ice cold. Strain, garnish with some mint leaves and you have yourself a good time.
6. Kilbeggan Irish Coffee
What is St. Patrick’s Day without the classic? This is how you should start your marathon day of cocktails, my friend. An Irish Coffee never disappoints and this one is no exception. The key to a perfect Irish Coffee? Delicious homemade whipped cream. Just mix heavy whipping cream with sugar until stiff peaks form. For the booze portion, all you’ll need is 1.5 oz of Kilbeggan Irish Whiskey, 1 oz of hot coffee of your choosing, .75 tsp of brown sugar and your homemade whipped cream (as much as you want.) Mix the coffee, the Whiskey, and the brown sugar together until dissolved. Top with whipped cream and a sprinkle of cinnamon. Delicious.
7. The County Clare Cooler
Last, but definitely not least is the County Clare Cooler. It gets its name from the great county in Ireland, known for their gorgeous landscapes like the Cliffs of Moher. If you ever make your way out there, cheers with one of these. They’re delightfully refreshing with a nice ginger-y zing. But for now, just make them at home and pretend you’re overlooking some gorgeous Irish scenery. You’ll need 2 oz of Irish Whiskey, .75 oz of apple cider, .75 oz lemon juice, .5 oz honey syrup, and 1 oz ginger beer. First, add the ginger beer to the bottom of a rocks glass, combine all the other ingredients in a shaker with ice. Shake until well-mixed. Add to the rocks glass. Enjoy.
